I think I owe everyone an apology. For being the worst blogger ever…I don’t even know if I can call myself that anymore. Anyway, I’d like to do a little life update! It’s currently 2:46 am but I really want to get this up since it will be the last post for a while. (more on that later!) and I just spent two hours trying to get the last 1000 of my 4000 iCloud pictures onto my new phone. I did it. I might have cried a few happy tears too.

Moving on…

So I recently graduated high school. Yeah. About time. Here are some pictures from the special day!

The day after graduation we had my graduation party which was so nice. Thanks to all who helped and everyone that came!

The next day, Memorial Day, was my last day of playing in the high school band.

Last weekend I had track finals. This year I picked up discus and really enjoyed it πŸ™‚ of course I still did distance races this year too!

And tomorrow I’m leaving until the end of July for my job at a summer camp playing piano. It’s the best job ever πŸ™‚

I was going to write more, but I think it deserves its own post. I promise have full intentions of doing it. But it’s now 4 in the morning and I can’t think straight so this girl is going to bed. 😊

Part 1 here!

For the second part of our trip we went on a cruise!

We went on the 4 day Carnival Imagination cruise to Catalina Island and Ensanada, Mexico. 

When we ordered our tickets we also got the “Faster to the Fun”, where we didn’t have to wait in any lines to get on the boat and get off. Well worth the $12 each. The first thing we did was eat lunch.

And then we ate some more and relaxed. And that’s about all we did for the whole cruise. 

It was great.

The ship left Long Beach at around 5, so the next day was our day at sea. People were saying that it was some of the worst waves in a long time and a lot of people on the ship didn’t feel well, including me. I did have a slight feeling of just wanting to be on real land and not stranded in the middle of the ocean..I went to the gym on the ship and made it a mile on the treadmill. I couldn’t even stay on it was so rocky! I tried lifting a few weights but just felt sick so I called it quits and that is the extent of my workouts while on the cruise. And you bet I enjoyed the break.

Luckily the next day the waves were down and we pulled in to our first port of call, Catalina Island. I headed out to explore (after breakfast!)

I might have maybe climbed a hill I wasn’t supposed to climb, but I did get to see some amazing views that I don’t think most people got to see. I don’t think I’d mind living here.

I made my way back to town and stopped at the cutest restaurant.

It felt so good to eat fresh, light food after all that (delicious) cruise food.

And if you know me at all –

Once we got back on the ship it was formal night. It was so fun to dress up! We went to this place for dinner every night on the ship. Why wouldn’t you when it’s included and you can have as much as you want?? Seriously, the fact that all the food was included on the ship was worth it by itself. I definitely made more than one midnight pizza run.You can bet I had an appetizer, entree, and dessert every night.Each night there was entertainment, and the concerts were so fun. I played bingo one night but sadly didn’t win. There were so many things going on it was impossible to make it to them all. One of my favorite things I did was just lay in a chair, read my book, and snack. Life was so easy.

The next day we sailed to Mexico!

Ensanada

It was my first time in Mexico, and to be honest…I wasn’t in love. Everything is cheap, but everyone was just a little too pushy. People telling you to go in their store, coming up to you on the street and trying to sell you things…yeah. Either way, I’m still so glad to see more of the world! And it was no doubt the best chips and guac of my life.

And for whatever reason my mom and I got Starbucks as we were going back to the ship. I don’t even like Starbucks.

It was our last night on the cruise, and the next morning we were out of our room by 8 to debark the ship and head to Universal Studios, which I wrote a little about in the last post. The next morning we flew home! 

I’m so blessed to have went on such a wonderful trip, and I’ll cherish the memories forever. Thank you, Mom ❀️

I feel like I’m not allowed to make a post on my own blog. It’s been so long.

But if I don’t, who will? I mean, I’m the one that pays for it…

I don’t know where it will go from here, but I miss posting so I’m hoping to get back into it a little!

Over spring break I went to California! We went to LA for a few days, then a cruise, which will be the next post (I promise I’ll actually post it too). 

We got in after a long flight at about 11 (2 my time..) so we went straight to bed. The next day we went on a bus tour of the city!

The city is so spread out. I don’t know how you could ever explore it all. We stuck to mostly Venice, Santa Monica (where I decided I’ll live someday), Beverly Hills, and Hollywood.

I wanted to get a robe so bad but I couldn’t justify spending $109.

Cornbread is probably one of my favorite breads. Sweet, buttery, and delicious. These muffins are a little different as they don’t have nearly as much sugar and are made with a yeasted dough!

I hadn’t tried making any bread for a while, but I still had the touch. What’s important is making sure the yeast is active when you put it in warm water. This time I mixed the dough with a mixer instead of by hand…it was much easier! After it’s well kneaded you can put it in a warm place in a bowl under a dishcloth to rise. I like to put it in my oven, after I turn it on for a few minutes. But don’t let it heat up all the way – otherwise you’ll kill the yeast! 

Once it’s risen beautifully like the above picture, you can punch it a few times. It’s a very sticky dough, so add a little flour as needed. Then, break it up into 12 balls and put them into a greased pan to rise.

I let mine rise for about 15 minutes while I heated the oven up to 400F. Bake them for another 15 minutes or until they’re golden. Look!

I asked my mom to make a soup with the muffins, so she made a yummy tortellini spinach soup. Chili would definitely be my first option with these but we’re trying to use up things in our pantry so it worked! Guys…we remodeled the kitchen! I can’t wait to share pictures when it’s all done!

I promise I have an actual post about my life almost ready to go. I just want it to be perfect, and it takes me a long time to get there..

Almond Cashew Muesli Balls | The Yooper Girl

I’m super excited about PB&Co’s new product – Almond & Cashew Butter! I was even more excited reading the ingredients: almonds, cashews, and sea salt. But eating it was definitely the best part of it all. I used it to make these easy and quick energy balls!

Ingredients
  1. 3/4 cup oatmeal
  2. 1/4 cup muesli (or oatmeal)
  3. 1 tbsp chia seeds
  4. 1/3 cup almond cashew butter
  5. 2 tbsp agave or honey
  6. 1/2 tsp cinnamon
Instructions
  1. Make oat flour by blending the oatmeal until it is fine. Add it, the muesli, and chia seeds to a bowl.
  2. Add in the nut butter, agave, and cinnamon. Mix well. I usually end up using my hands!
  3. Form into balls and store in the fridge.
  4. Enjoy for breakfast, snack, or dessert!

Hello blog. Much has happened since we last talked. I finished my junior year of high school, went to New York for a week, and am currently living in a cabin in the woods working at summer camp (of which I’m using my 15 minutes of internet time to post this)! Posts will be few and far between, but what’s new there πŸ˜‚

A few months ago I got a package in the mail from Peanut Butter & Co with their newest launch – Chocmeister hazelnut spread! Um yes. Chocolate. (giveaway at the bottom!) 

I used the Chocmeister in this Strawberry Banana Chocolate French Toast. French toast is good, but French toast stuffed with fruit and chocolate? Amazing. I even was super fancy and bought a loaf from the bakery that I sliced myself. Gourmet. We had a little brunch party and everyone loved it. I topped mine with maple syrup but whipped cream or powdered sugar would work fabulously too!

I felt like it was something you’d get in a restaurant yet I made it at home – so easily! Mom liked it, grandpa liked it, and Olivia said it was the best French toast she’s ever had. It’s simple!

Ingredients
  1. 4 eggs
  2. 1 cup milk
  3. 2 tsp vanilla
  4. 1 tsp cinnamon
  5. 1 banana
  6. strawberries
  7. 1/2 cup chocolate hazelnut spread
  8. crushed peanuts, if desired
  9. 8 slices of bread
Instructions
  1. Preheat skillet to medium heat. In a medium bowl mix eggs, milk, vanilla, and cinnamon. Transfer to a shallow pan. Slice bread into about 3/4 inch thick pieces.
  2. Take two pieces of bread and open them up. Spread chocolate on one side then place sliced strawberries and bananas on the piece. Cover with the other piece and dunk into the egg mixture then flip it over and dunk the other side (not the inside!).
  3. Place onto the heated buttered griddle and sprinkle with crushed peanuts, if desired. Let cook for about five minutes then flip to the other side, being careful to keep it together. Let the other side get golden brown and serve, cutting it in half and sprinkling with powdered sugar, whipped cream, or maple syrup.

Well hello there blog world. It’s been a little while, huh? I’ve got a few posts coming up that I can’t wait to share…I just need to get them all put together! For today, I’ve got a recipe that I’ve wanted to make for as long as I’ve been cooking.

Homemade doughnut holes!

They’re definitely not for the beginner baker, and I think even a very talented one would have trouble making these alone. My mom and I spent a Sunday afternoon making dough, letting it rise, shaping doughnuts, frying, and of course tasting them! 

I remember as a little girl we once made Indian fry bread and topped it with cinnamon sugar and it was the coolest thing I had ever eaten (I was a PICKY eater). Since then I’ve always wanted to try my hand at doughnuts. It only took years, but I can finally say that I made my own yeasty, sugary, homemade doughnut holes. 

cinnamon sugar doughnut holesThe first thing to do is make the dough. Yes, it is a yeast dough, so yes, you have to let it rise. For my yeast I always use Red Star Yeast. It never fails to work like a charm and I have a load of it from a Christmas basket they sent me! I find that my dough rises best when I put it in an oven heated to 170F then turned off. It doesn’t kill the yeast but gives it a nice warm environment to rise beautifully. 

Once it’s doubled, about a half hour, turn it out onto a clean mat and start to heat up the oil. Once the oil is at 350F-375F, start frying! This is where you’ll need two people because it’s pretty much impossible to do this alone.

It’s a VERY sticky dough. What helps me is to keep my hands wet with water so the dough doesn’t stick. Start grabbing small pieces of dough and rolling them into a ball. Put them into the hot oil (be careful!) and let them cook for about a minute on each side, until they’re a nice golden brown. Have a baking sheet lined with paper towel ready, and put the cooked doughnut holes on it. You also want a bowl of cinnamon sugar on the side. Don’t roll the hot doughnuts in it right away, but don’t wait until they’re cooled either. Complicated, right?

Keep doing this for all the doughnuts. Make sure they aren’t too big, or they won’t cook in the middle which happened to a few of mine. Around golf ball size is good. Sprinkle powdered sugar on if you’d like. I just wanted to for the pictures.

The recipe yields about 4 dozen doughnuts holes, so you can eat a ton and still have lots to bring to friends!

Right now as I write this, I’m laying in my hotel bed at our ski resort in Idaho! But that will be my next post. Last week was my trip to Lansing for Youth in Government, and here are all the pictures! Gluten Free Coconut Flour Pancakes on The Yooper Girl

If I had to pick a favorite breakfast food, I think it would have to be pancakes. (Don’t tell oatmeal or cereal!) I’ve gone through lots of pancakes phases, from heating up three frozen ones every morning in elementary school, to homemade ones every Sunday, to now, where I unfortunately rarely make them. 

I love how many varieties of pancakes there are. Thick, fluffy, sour cream buttermilk pancakes, thin, sweet, Swedish pancakes, or the Finnish oven pancakes, pannukakku. I don’t discriminate.

Just yesterday I had the most wonderful pancakes at a church retreat I was on. They didn’t even need peanut butter. Just butter and syrup were enough. That’s saying a lot from me!

Break Out of Breakfast Boredom

Cooks aren’t always pressed for time in the mornings – they just need new ideas. Think mug cakes, smoothie bowls, breakfast cookies and more. Show us the healthy way you wake up your breakfast – or wake up just for breakfast!

What else could I make besides pancakes? Nothing. Make a big batch for the week and store them in the fridge, or in the freezer for even longer! I’ll admit that reheated pancakes aren’t quite as good as fresh ones, but hey, it’s still pancakes!

Gluten Free Coconut Flour Pancakes. Healthy and tasty!These were an experiment to me, as I’ve never used coconut flour before! They took a TON of mixing, so don’t worry about overmixing the batter like in usual pancakes. Make sure all the lumps are out! You don’t have to worry about gluten developing since the batter is completely gluten free!

These do take a couple more minutes on each side than regular pancakes. They’re more flimsy so don’t make them huge either. Otherwise enjoy this gluten free version of coconut flour pancakes that will leave you with a ton of energy!

Ingredients

Instructions
  1. Mix wet ingredients in a medium bowl. Add dry ingredients and stir until no lumps form. (This took me at least 5 minutes!)
  2. Use a 1/4 cup scoop to pour batter onto a griddle heated over medium/high heat. Cook each side about 5 minutes, or until bubbles form.
  3. Serve!

So I never posted about my last adventure of the summer?! Whoops. I went to Canada!

Mom and I drove through downstate and eventually made it to our relatives’ Algonac, a tiny town on the St. Clair River. After a night there we got a late breakfast in Port Huron..

then crossed the bridge into Canada! It was fun to use my (basic) French skills while there. After a few hours on the Queen Elizabeth Highway we made it to Niagara Falls!

There were SO MANY people. I went for a run the next morning and was one of the few people at the falls at 7:30 in the morning. That was pretty cool. Reasons I love running! Unfortunately the selfie I took is gone forever because I lost about a month’s worth of pictures when I broke my phone 😒

We walked around the town and had dinner at Napoli.

We had a lovely brunch at our Bed and Breakfast.

And then we headed for Toronto! I wish I would’ve had more time there because it was such a neat city. First we explored the beautiful Casa Loma.

Then I got to meet Lee and Davida!!!!!

After that we got dinner at Fresh (so good!!!) and headed back for home. We made it back to the States and found a motel for the night. We did some shopping the next day, made a stop at Clyde’s after crossing the bridge, and finally were home.
