I’ve really had a variety of foods lately. So this WIAW is more like a What I Ate Week!
On Saturday I went to my most favorite place in the world – Noodles & Company! However, I haven’t been there since I started eating healthy, and my usual buttered noodles honestly didn’t sound that good. So, what did I get? Bangkok Curry.
Sadly, it was not my favorite. Oh well, now I know. But I don’t know when the next time I’ll be able to go to Noodles & Company is!
I’ve been eating a lot of salads lately. I really like adding something in, like rice or chicken or corn.
Please excuse my pictures…. I always remember to take one when I’m halfway done eating!
Breakfast today consisted of bran flakes, Greek yogurt, flax seeds, nutella, strawberries, and almond milk. Keeps me full til lunch!
For dinner tonight we made Pad Thai. I’ve never had it, so I was kind of unsure. Unnecessary! It was yummy! And will definitely make a great lunch tomorrow! Recipe coming soon π
I’ve also been snacking on the pumpkin pie my grandpa brought over…… sometimes I need a little junk!
Oh! If anyone remembers, I said awhile back I had to make a green smoothie for the Healthy sELF Challenge. My previous experiences with green smoothies had not been very good, but this one is a winner!
Leigha’s Green Smoothie
Ingredients!
*I really don’t measure much… just throw whatever in!*
2 handfuls spinach
1 banana
2 spoonfuls Greek yogurt (vanilla)
1 spoonful peanut butter
almond milk
handful of icecubes

Blend until no ice chunks….
Viola! Delicious green smoothie! I loved it because it didn’t taste like spinach. You could slightly taste the peanut butter which made it thicker and even more scrumptious! I am definitely making this again soon. And such simple ingredients! π
