It’s about time that I jump on the pumpkin bandwagon! Last Friday I had the day off from school, so of course I did some baking. I had a ripe banana and a can of pumpkin that were just waiting to be used! So I bring you…
- 1/4 cup butter
- 1/4 cup applesauce
- 2 tablespoons agave nectar
- 2 eggs
- 1 cup canned pumpkin
- 1 ripe banana
- 1 tablespoon water
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/3 cup chocolate chips
- Preheat oven to 350 and spray a bread pan. In a large bowl, mix or beat butter, applesauce, agave nectar, eggs, pumpkin, banana, water, and vanilla. Then mix in flour, baking powder, baking soda, salt, cinnamon, and chocolate chips. Scoop into pan and bake for about 70 min or until toothpick comes out clean. Cool in pan and enjoy!
As this was baking in the oven my grandma came over and brought me some pumpkin bars. The only similarity these two share are the pumpkin. Grandma’s bars were light and airy, this bread is dense and hearty!
I hope everyone’s week is going great! I think we’ve had our last nice day. It was in the 50’s today, but we’re supposed to get snow on Friday!

It’s spring where I live, so unfortunately the cold weather is disappearing (I really like the cold!), but summer has its upsides! (:
