Remember my Grandpa Kelvin? You know, the one that helped me with my garden. Over Christmas Break I went to his house and he showed me how to make a pumpkin pie from scratch and an apple crumb pie!
First we made the pumpkin pie. He grows a pumpkin patch every year, so we used fresh, homegrown pumpkin!
Then we were off to work. First you mix 3/4 cup sugar, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp ginger, and 1/4 tsp cloves. Make sure you mix these before adding any liquid! Then add 2 eggs, 2 cups pumpkin, and 1 can of evaporated milk.
Now you need to make your crust. Take about 1.5 cups of flour, 1/2 cup of shortening, and a dash of salt. Use a pastry blender to make some coarse crumbs. Then add about 6-8 tbsp of cold water until it’s sticky enough to roll out!
Take a rolling pin and spread the dough enough where it will cover a pie pan. Remember to flour the countertop!
Place the dough in your pie pan. A great trick to get it in there is to roll the dough around the rolling pin then unroll it over the pan! Make sure the dough is pressed to the pan.
Take a knife and cut around the edge of the pan. You will probably have a lot of extra crust.
Now you’re ready to add the filling! Only fill about 3/4 of the way up. You’ll find out in a second why.
Carefully place the pie in the oven set at 425*. Now add the rest of the filling. Had you of added it before, it would’ve been really hard not to spill.
After 15 minutes, turn the oven down to 350*. Bake for 50 more minutes. Pie is done when a knife comes out clean.
Don’t worry if it looks a little liquidy, it will set as it cools.
Then we got to work on the apple pie! First you have to peel, core, and slice about 6 apples.
Make the crust the same way as before, then add the apples. Eat the leftovers π
Mix 1/2 cup sugar and 3/4 tsp cinnamon, then pour evenly over the apples.
Now mix together 1/3 cup sugar, 3/4 cup flour, and 6 tbsp cold butter until crumbly stage. Top the apples with it.
Bake at 400* for 35-40 minutes, or until a fork can be easily inserted into an apple. It will sink while baking.
It was really fun to spend time with Kelvin!

Those both look so good! My uncle made organic pecan, apple,and sweet potato pie for Thanksgiving and they were all so delicious. I love baking pies but haven’t in ages!

They were so yummy! Everything tastes better when it’s homemade. At Thanksgiving he made a pie with squash instead of pumpkin – I couldn’t even tell the difference!
