I am one of those people that when I make a recipe, I don’t plan anything out beforehand. I’m always scrambling to get the spice or ruining my omelette because I’m chopping when it’s time to add. Anyone with me?
I need to get better at that.
I wasn’t sure how these burgers were gonna turn out since I was just throwing things together, but they actually were pretty dang tasty!
Canned black beans and sweet corn are laced with great-for-you sweet potato (yam?) and spices to make a vegetarian (easily made vegan) burger that won’t even make you miss the meat. These babies are a plethora of flavor.
You probably don’t want to make your burgers as thick as mine. First, they won’t cook all the way through; and second, it’s almost impossible to open your mouth that big.
Please excuse the shriveled and pathetic avocado I had to use. Avocados should be bright, vibrant green, not poop-colored.
The maple garlic cream sauce? I got that from here. It’s flippin’ good. I could, I would, and I did eat it plain.
Don’t be like me and add the corn before you mash the beans and potato. I had to pick the corn back out so I didn’t have mashed corn… Back to the I need to get better at planning what goes in when.
That cilantro you see in all the pictures? It didn’t actually get added to the burgers. I’m thinking it would add even more flavor though, so feel free to add some!
These look awesome
One of the reasons I don’t post recipes on my blog (yet!) is because I never measure anything, and “2 spoonfuls” isn’t that accurate

I ALWAYS chop when its time to add to my omelette! Or oatmeal – I’m terrible with oatmeal. I don’t even get half my ingredients out until my oats are bubbling and I nearly burn them.
You always come up with such delicious looking recipes! I reeeeally want to give these a try.

That’s why I cook my oats for 20 minutes, there’s no certain time you have to ad the ingredients
let me know if you ever try these!
Yum! These look fantastic Leigha. Thanks for sharing!
