I am one of those people that when I make a recipe, I don’t plan anything out beforehand. I’m always scrambling to get the spice or ruining my omelette because I’m chopping when it’s time to add. Anyone with me?
I need to get better at that.
I wasn’t sure how these burgers were gonna turn out since I was just throwing things together, but they actually were pretty dang tasty!
Canned black beans and sweet corn are laced with great-for-you sweet potato (yam?) and spices to make a vegetarian (easily made vegan) burger that won’t even make you miss the meat. These babies are a plethora of flavor.
You probably don’t want to make your burgers as thick as mine. First, they won’t cook all the way through; and second, it’s almost impossible to open your mouth that big.
Please excuse the shriveled and pathetic avocado I had to use. Avocados should be bright, vibrant green, not poop-colored.
The maple garlic cream sauce? I got that from here. It’s flippin’ good. I could, I would, and I did eat it plain.
Don’t be like me and add the corn before you mash the beans and potato. I had to pick the corn back out so I didn’t have mashed corn… Back to the I need to get better at planning what goes in when.
- 1 can black beans, rinsed and drained
- 1/2 large sweet potato or 1 small sweet potato, cooked
- 1/2 cup corn
- 1/4 cup oats (bread crumbs would work)
- 1/4 of a chopped onion
- 1 egg
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 3/4 teaspoon onion salt
- salt & pepper to taste
- whole wheat buns
- 1/2 cup plain greek yogurt
- 1 tbsp maple syrup
- 1/2 teaspoon garlic powder
- Add black beans and sweet potato to a bowl and mash. Don't add the corn yet... unless you want mashed corn!
- Add the corn, oats, onion, spices, and egg. Mix it up.
- Heat a skillet over medium-low heat and form the mixture into patties.
- Add 1-2 tbsp of olive oil to the skillet and cook patties. It takes about 5 minutes for one side, and about 3-4 for the other.
- Top with maple garlic sauce and avocado.
- I made 4 HUGE burgers. You'd be much better off to make 5-6 smaller ones! Also, you can cook these in the oven if you're prone to ruin them when you flip, like me.
- To make gluten free, use gf oats.
- To make vegan, replace egg with a flax egg. I haven't tried it, but I bet it would work!
