Happy What I Ate Wednesday, everyone!
I had a track meet yesterday which = boring eats (but I did break 12 minutes in the 2 mile!!!), so here are my eats from Monday! It was also Cinco de Mayo, and of course I forgot to make anything festive.. figures. I even remember last year specifically planning to make something! Anyway, here are my eats π
Breakfast
The usual breakfast of overnight oats with the only change being sunbutter instead of peanut butter. I was kind of iffy about sunbutter, but after trying it in my oats I’m hooked. Yum.
Lunch
On Sunday I made a batch of Pinch of Yum’s Crockpot Sweet Potato Lentils for some easy lunches/dinners during the week. Anything by them is always amazing, and these were no exception! So flavorful! An apple and kale on the side.
Snack
Before track I had a Kind bar. Lovelovelove this flavor. Actually, I haven’t found a flavor I don’t like yet.
I did 2 easy miles at track then walked a mile home because I didn’t have a ride. #freshmanprobs haha! I had my piano lesson and when I got home this was on my counter.
Homemade bread from Kelvin! On the left is Swedish rye and the right is honey wheat. I’m going to pick the one I like more and we are going to make it like when we made homemade pies!
Dinner
I took advantage of the bread and used the rye for dinner, which was spot on.
I cooked some pesto salmon in the toaster oven which worked like a charm. Then I had half a sweet potato with cottage cheese and cinnamon, and some tuna salad + avocado + onion that mom made on the bread. Ahhh-mazing.
Dessert
Before bed I had the other kind of bread (honey wheat) with peanut butter and banana. You didn’t think I wasn’t going to try both flavors?! I think I want to make the Swedish rye, but I better eat some more just to be sure π
I’m off to school, have a happy hump day!

we pick them and freeze them in big bags so i discovered them in the frezer! π
I had a bad experience with overnight oats and now I am terrified to make them again! I literally need someone to give me step-by-step instructions so that I don’t mess them up again. π Everyones (and yours!) always look delicious so I need to figure this out STAT. π

what was your bad experience? (lol im nosey :P) uhm basically with overnight oats you layer your oats,milk,seed and yogurt the rest you leave till the morning as bananas and fruit can go mushy overnight hope this helps π

MHmmm yes to kind bars! I’m a big fan :). And GIRL. You’re kidding me! Breaking 12 minutes for TWO miles? I’m on my knees bowing down to you haha. You’re a beast! On another note, isn’t freshly baked bread the best?! I usually only have it when my Aunt makes it, but the taste is seriously awesome :).

I can’t believe you can run 2 miles in 12 minutes. That’s like one mile for me π All these eats look delicious!!

I have tired overnight oats before but didn’t like them. I’m wanting to give them another try though! I love homemade bread! It is infinitely better than store bought!

While the food in this post is certainly nothing to scoff at, are you saying you ran 2 miles in under 12 minutes? Holy crap; that is fast. I am super impressed. I’d be lucky to run a 9 minute mile.
Coming home to homemade bread might be one of the best endings to an otherwise good day. I say you recreate both. π
I never imagined I’d be able to run that fast.. I guess you can do anything if you don’t give up and train hard! π

Homemade bread is the best – I haven’t made it a lot recently but since my husband and I just moved back in with my parents I think I’m going to have to put their bread maker to work! (I don’t have a bread maker and it just makes the whole bread making process so much easier!) When you try out that Swedish Rye I’d LOVE the recipe!

I really like your WIAW especially the oatmeal. I’m a huge fan of overnight oats and nutbutter. But never tried sunbutter yet.

Confession: I miiiight like sunflower seed butter more than peanut butter in my overnight oats. It’s so dang good! And I don’t think I even need to tell you how I feel about overnight oats. π

We used to have one of those fancy bread makers a long time ago, but I’ve yet to make homemade {yeasty} bread. I think I want to some day though!

I like peanut butter more right now since I use crunchy and my sunbutter is creamy, but if the sunbutter was crunchy I would toootally like it more too π It just melts to beautifully! Hahaha I like the fact that we are discussing nut butter/oatmeal combos π
There was a stage not too long ago where I was utterly hooked on overnight oats..if not for breakfast, then dinner π . I think the over-obsession drove me off it!? But being exposed to it so often at Alison’s and now you..I am contemplating a reappearance. When I do have it; cold from the fridge for me!
I commend you on meal prepping girl! I just can’t..anything beyond a sandwich/scrambled eggs is intimidating. Thank heavens for Mum’s cooking to fall back on when I’m craving chicken or a lentil dish <3.
Oh sunflower seed butter! It -just- made an appearance at a store in my parts, and after squealing in excitement I nearly dropped dead at the price; equivalent to the lovely sports bra(!) I bought the other day. I know sooner or later I'm going to cave in..but tell me – is it worth it?!?

As for sunbutter, I don’t think you should spend a fortune. It’s good, but maybe not change your life good!
