Look at that beauty. That just so happens to be vegan, gluten free, and loaded with all kinds of flavors.
We’ve got quinoa added to some sauteed garlic and onions, cooked in vegetable broth, then stirred with a can of black beans and chickpeas that all combine for one of the most intense flavor combos like, ever. Then topped with avocado? Ohhhhhemmmmgeeeee so good. sososogood.
I based this off of my Mexican Quinoa Salad but I think I like this one even better. The pictures are a little better too, don’t you think? π

This is super yumlicious straight out of the pan, but it gets even better as it sits because the flavors meld together! I just finished the last of it for lunch yesterday and now I’m kind of mad that I have to go back to PB&J’s.
