It’s been awhile since I did a weekend recap post and I had a pretty fun filled one, so today I’m linking up with Katie for Marvelous in My Monday!
I had a cross country meet in Shawano, WI, about 2.5 hours away. I brought some overnight oats with me for the 6:30 AM leave time. Lately I’ve been using this package of chia, hemp, and buckwheat and it’s great!
I warmed up about a mile with a few strides before the race. I think there were around 160 girls in the race and I finished 13th with 20:53!
I’m not super happy with my time but I felt pretty good after the race so I think I could have went faster. After the race… Panera!
After Panera we headed to the mall for a little shopping.
I bought these adorable measuring cups from Francesca’s! Love that store. I also got this running jacket and a new journal from TJ Maxx! I could spend all day in that store. All the gourmet food/furniture/cute clothes!
I read my book during the 5 hours in the car. It’s “East of Eden” by John Steinbeck and it’s definitely different than my usual kind of reading! I like it though. It’s one of those books that take you through a whole life.
I was hungry when we got home but nothing was sounding good. Lately after races my stomach’s been feeling off! I decided on some homemade bread with half pb/banana half avocado/cottage cheese.
Sunday morning I slept in (glorious) and made pancakes for breakfast!
Bob’s Red Mill whole grain mix topped with almond butter, chia, hemp, buckwheat, banana, and blueberries. I don’t have time for pancakes during the week so I look forward to my weekend pancakes!
I played piano at the church and worked from 12-4 so that was a majority of Sunday. We had Janae’s cream cheese chicken chili when I got home and if you make one chili recipe this year, make this one. SO good.
I made a few bowls of overnight oats for breakfasts, packed lunch, picked out outfits, and then Mom did this.
Well, that’s all I have. Hope everyone has a good Monday!

Okay, that time ROCKS! It may not be a PR but it is definitely something to be proud of. π I’m craving pancakes SO badly right now but the only ones available are the box mix dining hall kind…yeah no thank you. When I go home I am definitely going to get Bob’s mix and try it out! Have a great Monday. π
It tasted a little bit different than normal buttermilk pancakes but I liked it! Thanks Emma π <3

Thanks Lauren! I am just getting out of a cold too so I bet that made a difference!
I know how that feels. I have set new PRs before but felt a little energy left. I hate that feeling. Just celebrate your accomplishment from this weekend and push yourself harder next time π
Yep! I’m just getting over a cold too so I think that made a difference!
