Fall is in full swing here in the UP. The leaves are absolutely beautiful right now and the weather is getting cooold! I thought I’d link up with Marvelous in My Monday this week and share some fun weekend stuff.
First, where did this weekend go? On Friday I did my first portrait session(!!) which went amazing and I definitely want to get into doing more. (Thanks for being my model Aly!) If anyone wants pictures done let me know π
I had a meet on Saturday where I won my first cross country race! I ran it in 20:20 which isn’t my best, but I felt really good after so I know I can go faster. My team won for the girls’ race!I worked on Saturday night…
Sunday started with church and these <3
I love my Sunday Morning Pancakes so much.
I made two new recipes that I can’t wait to share later this month and then I went to a friend’s to make and can homemade apple sauce!
It’s actually fairly simple. The hardest part is cutting all of the apples!Ingredients:
- apples
- cinnamon
- sugar

After that I went to the farm and got some of the last produce for the season. I’m planning on doing a post about this year’s garden and the abundance of veggies we got so I’ll post those pictures in that post!
Then I made this for a quick dinner and I think it deserves a spot in this post.
I just microwaved two small sweet potatoes and topped with with cottage cheese, avocado, Nuttzo, chia, buckwheat, hemp, and homegrown sprouts! It only took 10 minutes to make and it’s going to be my new go-to!
And that’s about it for this weekend. It was really busy but I did get to catch up on a few blogs. I probably won’t get a chance to post until Fashion Friday so I will see everyone then!

Yep! I hear you Leigha, in so many ways…..but especially sunday morning pancakes! Yours look yummmmyyy! I made applesauce in the crockpot a few weeks ago, SO much better than store bought, especially as you can add whatever flavors you want to it! I think you should definitely join us in meatless monday π Loved the pic of you with your CC team….of course π

Leigha, your photography is getting ridiculously good! You have a serious talent for everything that you do – I love how you throw all of your energy into anything and everything. I continue to be inspired by everything you put up here! I saw the apple sauce on instagram and was just like WOW! It looks amazing, so sweet and pure! Awww, thank you so much, Tash! You are the sweetest! And right? I love the pink color! I think it’s because we didn’t peel the apples and they were quite red!
After we go apple picking in the fall I peel and cut up the apples, and then put them in bags in the freezer. Each bag makes one pot of apple sauce later in the year for a special treat! It’s so much better than store bought apple sauce, and ends up being one of the things i crave when I always get sick later in the winter.
That is such a good idea! I would definitely do it but I don’t have room in the freezer, haha!
