Hello everyone! It’s Monday morning and I am ready to kill this week (in a figurative way, not literally;). I have my first meet tomorrow and on Wednesday…
The talent show.
Uhhh yeah. I might have signed up.
But let’s not talk about that. Let’s talk about dinner last night!
But first – breakfast. See that stuff on the top left? Homemade almond butter β₯β₯ for my pancakes I always use Bob’s Red Mill Pancake Mix and add chia seeds, milk, water, and a drop of oil. Top with whatever you fancy and enjoy pancakes that rival those of any restaurant.
Dinner was a good one. I made Skinny Taste’s Mushroom Kale Lasagna Rolls into real lasagna – the first time I made lasagna all by myself! I feel like this is a big milestone in the cooking world. I made my own noodles too via Minimalist Baker.

For the bread I just sliced a loaf almost through, mixed 2 tbsp butter with 2 tbsp pesto, spread it inside, and stuffed it with mozzarella! My brother even ate “the green stuff” πRound two!Dessert – Minimalist Baker’s Vegan Cheesecakes!
