Frozen bites of the best combination in the world – peanut butter and banana!
Sometimes the simplest of recipes end up being the best. No frills, no hard techniques, no fancy ingredients. There’s only two ingredients required in these peanut butter banana freezer bites!
I know it’s super clichΓ©, but for the new year I definitely want to watch my sugar intake. It’s been kind of bad lately (lol oops) and I know how much better I feel when I eat whole foods and natural sugars. When I got an email from Peanut Butter & Co about their project this month, it couldn’t have been a better fit! Enter #EatClean.
It’s not about eating low calorie and low fat food. It’s not about juice cleanses or the new fad diet. It’s about eating minimally processed foods like whole fruits and veggies, nuts & seeds, whole grain breads & pastas, whole grain flours, steel-cut oats, quinoa, brown rice, dried beans, unrefined oils, Greek & Icelandic yogurt, honey, maple, and coconut sugar. Doesn’t it all sound so good? Healthy, TASTY food makes me so excited.
Also being introduced is a new line from PB&Co – Mighty Nut Powdered Peanut Butter! (Scroll to the bottom for a giveaway!!) If you haven’t heard of powdered peanut butter, it’s a way to enjoy everybody’s favorite snack without feeling super weighted down, like I sometimes feel when I eat a little too much PB. I LOVE adding it to smoothies, and you can use it to bake too! I used the Flax & Chia flavor for these. Even more antioxidants and fiber!
Give these peanut butter banana freezer bites a shot. Eat them right after assembling or let them freeze for a refreshing snack or dessert! Use as much or as little filling as you like. I don’t think it’d be a bad thing to dip them in chocolate either! π
- 2-3 bananas, on the riper side
- 1/2 cup powdered peanut butter
- Make the powdered peanut butter into a paste by adding water. Cut the bananas into slices. Take two slices, spoon peanut butter in the middle, and close the sandwich.
- Freeze in an airtight container or eat right away as snacks!
