It’s my first day back at school in 5 days. Teacher in-service on Friday, and snow days Monday and Tuesday. I’ve been enjoying my time off! Well, at least there’s only 3 days until the weekend. Snow day eats are so much better than on a regular school day since I don’t have to prepare 2 of my 3 daily meals ahead of time. Here is What I Ate Monday!
Breakfast
A 2 egg omelet plus a piece of peanut butter banana toast and cottage cheese mixed with homemade jam! <— delish!
Lunch
2 pitas with some Tuna Salad – it was even better the next day!
I definitely had a cookie or two..
Dinner
My mom tried a new recipe – crescent rolls filled with cream cheese, ground turkey, cheddar, and green chiles. I didn’t think I was going to like it, but it was actually pretty yummy! Some green beans on the side.
Aaand more cookies.
It was a pretty balanced day of eats! I’d like to share the cookie recipe, but it’s barely a recipe.. I just like the pictures I took π anyway, have a great WIAW and I’ll be having fun drooling over all of your eats!

Peanut butter banana toast is the best! Those cookies look incredible too! Jealous of your snow day, we don’t get any of those in Arizona π

Hehe thanks girly! I’m so happy I upgraded π I just tried tuna for the first time this summer! It’s not my favorite, but it’s just so healthy I have to eat it sometimes!
