Grandma’s Dulce de Leche Poke Cake

I didn’t plan on posting today, but then Grandma and I made a cake last night and I have to share the recipe! And while I’m sharing that, I might as well share the rest of the day since I already take pictures of every single thing I do πŸ˜‰ overnight oats It was my first time having overnight oats since school got out! This was half oats/half muesli with banana, greek yogurt, cottage cheese, and bloobs. <3 After a bike ride and walk with mom I was more than ready for lunch. yogurt bread pb banana kale avocado cottage cheese One slice of peanut butter banana toast, one slice of avocado/cottage cheese toast with kale, and a yogurt with a new granola I found. I was so full after this. But it was so worth it. leigha + mom Then we went to the beach! day at the beach Does anyone have a beach right in their town? I take it for granted that I live a minute away from Lake Michigan. (and it will soon be my backyard!) beach day After an hour in the sun we went to the farmer’s market! farmers market I’m so excited for all of the produce to come in season! This is a chia drink that one vendor was giving samples of. chia drink Grandma made tacos for dinner! tacos If you’ve never put doritos on your tacos you’re missing out. I needed dessert so grandma and I made her famous cake! mandarin orange cake The secret ingredient is mandarin oranges. But don’t be scared! You can’t taste them at ALL. It makes the cake super moist and all caramel-ly and then the sauce you pour over it? I would drink it plain. Butter, brown sugar, and milk. <3 grandma's dulce de leche cake The hardest part was waiting for it to cool. It took an hour. I was ready for a whole ‘nother meal! yummy cake Cool Whip is optional, but mandatory. Ice cream would also be a lovely choice. grandma's dulce de leche poke cake Recipe!

Dulce de Leche Poke Cake

You'd never guess the secret ingredient in this scrumptious poke cake!

For the cake
  1. 2 cups sugar
  2. 2 cups flour
  3. 2 eggs
  4. 2 tsp baking soda
  5. 1 tsp vanilla
  6. 2 11oz cans mandarin oranges, drained
For the topping
  1. 6 tbsp butter
  2. 6 tbsp milk
  3. 1 1/2 cups brown sugar
Instructions
  1. Preheat oven to 350F. Mix everything for the cake in a mixer. Pour into a greased and floured 9 x 13 pan and bake for 30-40 minutes.
  2. 10 minutes before cake is done bring the butter, milk, and brown sugar to a boil, then turn it off. Poke holes in the cake when it's done baking and pour it over the hot cake.
  3. Let cake cool for about an hour; serve with cool whip.

    No beaches anywhere close to my apartment. In fact, the lake the city I live in is ‘famous’ for is man-made. So much for natural waters around. However, my grandparents live seaside so every time we visit them – whichever season – a walk on the beach is mandatory.
    Speaking of which: “Cool Whip is optional, but mandatory.” We don’t have Cool Whip over here but I agree some desserts just call for a nice slab of whipped cream. Your grandma’s cake looks spectacular and I’d have never guessed the addition of mandarins though I guess they add a nice fresh note to the whole cake.

      Oooh, that’s so cool that they live seaside!
      I had some with whipped cream because we ran out of cool whip and it was just as good πŸ™‚ and yes, they make it so nice and moist!

I was able to go back to Alaska earlier this summe I was able to go back to Alaska earlier this summer! We got incredibly lucky and were able to see the whole Alaska Range from a lookout on the drive up to Fairbanks πŸ”πŸŒ²
