First of all, I want to give a big thank you to everyone regarding yesterday‘s post. I was overwhelmed with the amount of support and kind words I received. and You guys are the best! 

It’s the 21st, which means it’s time for a Recipe ReDux! Here is this month’s theme:

Favorite Chocolate Matches
Does your chocolate need a friend? This month’s posting will be after Valentine’s Day, so you may have a bit of extra chocolate around. What’s your favorite chocolate match? Be it traditional peanut butter or something more exotic like cayenne + chocolate. Show us your favorite healthy chocolate combo recipe.

For my chocolate match I decided to go the old banana/chocolate way. Peanut butter and banana will always be #1, but chocolate and banana is still a pretty dang good choice! 

Superfood Healthy Monkey Tails on theyoopergirl.com-2I used to have a major chocolate tooth. I’d have it at least once, usually twice a day. Of course it was all milk chocolate because dark chocolate was naaasty. Times have changed, and now I’ll occasionally enjoy a few pieces of chocolate – dark, of course! 

My recipe today is a spin off of the old classic Monkey Tails – you know, frozen bananas dipped in chocolate and served on a stick? Those scream summer and softball tournaments to me. I always had the hardest time biting into the banana, though!

For these healthified Monkey Tails, I coated the frozen bananas in dark chocolate and an array of superfood toppings! Look at all of those colors. I love it!

Feel great about indulging in this healthy snack - frozen bananas dipped in chocolate and rolled in your choice of toppings!

Ingredients
  1. 6 popsicle sticks
  2. 3 bananas, cut in half and frozen on popsicle sticks
  3. 1 1/4 cup chocolate chips
  4. 1/2 tsp coconut oil
  5. 1/2 cup granola
  6. 1/4 cup pistachios
  7. 1/8 cup goji berries
  8. 1/8 cup hemp seeds
  9. 1/8 cup chopped walnuts
  10. opt: almonds, peanuts, white chocolate, crushed candy canes, shredded coconut... anything you can dream of!
Instructions
  1. Cut bananas in half crosswise and stick a popsicle stick into the cut end. Place in an airtight container and freeze for at least two hours.
  2. Get all of your toppings ready and set out a pan with parchment paper! Melt chocolate chips in the microwave or a double boiler. Once it's all melty, dip a banana half in and swirl it to cover. Quickly roll it in the topping of your choice and set on the parchment paper.
  3. Repeat with the remaining banana halves. Eat immediately or place back in the freezer in an airtight container to enjoy whenever you want!
Notes
  1. Work quickly when rolling the bananas in the toppings - since it's frozen, the chocolate will harden fast!
  2. If you missed a little spot, spoon a small amount of chocolate on and press on toppings.

    Gahhhh- I’m completely in love with these! I always associate this chocolate covered bananas with Disneyland/theme parks since I always get them when I go :). Love how you healthified these and GIRL. YOUR PHOTOS! Stunning!

      Thanks Christine!! I didn’t get to edit the photos as much as I’d have liked so this is pretty close to the originals.. I’m pretty happy with them! I always got the chocolate covered ice cream Mickey face at Disney World πŸ™‚

    These are my favorite snacks! Seriously you can add ANY toppings, and they taste amazing. Also, there’s nothing like coming home from school and already having your snack made!!

      Hi Sam! The coconut oil is for microwaving with the chocolate chips. I don’t think it’s necessary, but it makes it more creamy! πŸ˜€
