Spring cleaning
Go through your pantry, cupboards, freezer, or fridge; what βtreasuresβ have you found? Pick an ingredient/spice/condiment thatβs been hanging out for a while and give it the attention it needs. Share a healthy recipe made using your new-found pantry prize.
Trust me… there are a lot of things I could have chosen. It’s pretty much a scavenger hunt when I try to find something in my pantry and I often forget about what I buy. (but! not much longer! kitchen remodel!!!) In the bottom shelf I found a bag of these wittle bitty green-looking things.
Raise your hand if you’ve heard of freekeh!
*crickets*
Well, I’m here to tell ya.
Freekeh is young green wheat that’s been toasted and cracked. (sorry gluten free folks… none for you!) It’s an ancient grain and is full of protein, fiber, and all that good stuff. Use it like you’d use any whole grain.
How I chose to use it: oatmeal bake!
My breakfast game has NOT been on point lately. Now that I drive to school I don’t have to get up and catch the bus —> I barely have enough time to get dressed, let alone sit down and eat a hearty breakfast. I might even be resorting to granola bars O.O well friends, I don’t have any excuses anymore. Throw a piece of this oatmeal freekeh breakfast bake in the microwave, top with some peanut butter and greek yogurt, and my day’s off to a nutritious and delicious start.
I really hope you guys enjoy this! I loaded mine with walnuts, raisins, and cacao nibs, but really anything will work. If you can’t find freekeh, simply replace it with more oatmeal. I think quinoa would work fantastic as well!

- 1 cup oatmeal
- 1 cup freekeh
- 1/3 cup coconut sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/3 cup walnuts
- 1/3 cup raisins
- 1/8 cup cacao nibs
- 1 cup almond milk
- 1 egg
- 1 ripe banana
- 1 tsp vanilla
- 1/2 cup greek yogurt
- Optional: Soak the oatmeal and freekeh in a bowl together overnight.
- Preheat oven to 350F and grease a rectangular baking pan.
- Combine oatmeal, freekeh, sugar, cinnamon, baking powder, and salt in a large bowl. In a small bowl, combine milk, egg, vanilla, mashed banana, and greek yogurt.
- Pour liquid mixture into oatmeal mixture and stir until evenly distributed. Stir in the raisins, cacao nibs, and walnuts. Transfer into the baking dish and bake for about 50 minutes, or until liquid is absorbed and it's golden brown.
- It's not overly sweet on its own, so I recommend topping with maple syrup, peanut butter, or yogurt!
- Can also be baked in a square baking pan.

This looks awesome! I’ve recently heard of freekeh, but have yet to buy it/use it. I’m hosting a bunch this week and was just thinking that I could make an oatmeal bake for my friends. If I can get freekeh, I’ll make this! If I veganize it do you mind me sharing it on my blog?
Also, what size dish? 8×8 or 9×13? I’m guessing 8×8 or so

GO FOR IT! π I’d say an 8×8 if you make a square pan, but what I use is a 6×11!

I’ve been meaning to try freekeh for such a long time now- this breakfast bake sounds absolutely delicious and the kind of thing I would love to have for breakfast! Yum!

I have some freekeh in my pantry, but haven’t used it in quite a while. It didn’t go over so well with the hubs. But maybe it would with this awesome looking breakfast bake!
This is a great way to use it! The flavor isn’t overpowering since there’s oatmeal as well with yummy spices π
I absolutely love freekeh! Although, I am pretty sure I am the only one who buys it at our store because there was a sale and tag saying it was being discontinued π i bought them out haha. This looks so yummy! I have been cooking a big pot with different flavor tea bags on the weekends for breakfast during the week π and I always top with some PB!

Oooo! I’ve never tried freekeh before (I’m digging the name though. Let’s get “freekeh.” Had to.), but I’m always down for some new, nutritious whole grains! I cannot wait to bake again and make things like this!
I will now always think “Let’s get ‘freekeh’ ” when I make it, hahaha. π
