It has been way too long since I did some Cooking with Lynn. If you’re new around here, Cooking with Lynn is where I cook some seriously good eats with my step-mom, Lynn!
Let’s start with what I did before I went over to my dad’s. My church is planning a youth retreat at the beginning of March and they asked me to help plan for it. Yesterday a few kids and myself went to my priest’s house to discuss what we wanted to do, and have a lunch – chili and grilled cheese! Quite delicious. Don’t let the bowl fool you – it was bigger than my head!
Having a huge food baby, I didn’t think I’d be too hungry for a big dinner. I went cross country skiing, played some piano, did some yoga, and by then it was time to head to Dad’s and… I was hungry. What can I say, appetite of a runner!
I’ll let the pictures do the talking now π please excuse the iPhone pictures – I forgot my camera! I was so mad!
Appetizer: guacamole tomato mozzarella bruschetta – could have eaten this alone for dinner!
Wild rice seasoned with carrots, onions, celery, spices, and asparagus
Parmesan crusted lemon salmon
Everything! You know, this plate x 2..
Cookies! I’ll have the recipe up later this week π
It was such a fun night of cooking! Once basketball is done I’m sure we’ll do this more. I sure hope so! Have a marvelous Monday and I’ll talk to ya later!
Are you a fan of salmon?
It’s not my favorite but it’s so healthy I can’t pass it up!
