We’ve got quinoa added to some sauteed garlic and onions, cooked in vegetable broth, then stirred with a can of black beans and chickpeas that all combine for one of the most intense flavor combos like, ever. Then topped with avocado? Ohhhhhemmmmgeeeee so good. sososogood.
I based this off of my Mexican Quinoa Salad but I think I like this one even better. The pictures are a little better too, don’t you think? 😉

This is super yumlicious straight out of the pan, but it gets even better as it sits because the flavors meld together! I just finished the last of it for lunch yesterday and now I’m kind of mad that I have to go back to PB&J’s.
