Good morning everyone! I’ve been up since 4:30 today because my school band played for the Honor Flight at 5:30, which is a flight for the local veterans to DC where they spend the day! Needless to say, I hope the day goes by quickly because I need a nap. Onto the eats! These are Tuesday’s meals.
Breakfast
The usual overnight oats topped with cottage cheese + sunbutter + bloobs. That melty sunbutter tho ^^^ π
Lunch
PB&J&B made with the last of Kelvin’s homemade bread + an apple + coconut cashews + almonds
and then this happened….
Sandwich down. Oops.
It still got eaten. I’m not one to waste food π
Snack
Hands down the best Larabar flavor. It tastes just like a Reeses! I had this before track which was 1/2 mile warmup, 20 minute easy run, 1 mile of 150m stride x 250m jog, and 1/2 mile cooldown. ~4 miles.
Dinner
I made Robyn’s black bean quinoa mango salad (quinoa, black beans, corn, red pepper, scallions, and mango) and it sure didn’t disappoint! Love that girl. It’s pretty similar to my Mexican quinoa salad, without the spices. I realized after I cleaned up that I forgot to add the avocado… dang. I served it with the last of the sweet potato lentils I made last week!
I wasn’t too hungry for dessert, but I snacked on 1/2 a banana with peanut butter and greek yogurt before bed. And also some milk straight from the carton (sorry Mom) π it was the perfect night time snack!
That’s all for now! Later today I’m going to a pizza party at church. Hallelujah π

Let me add to the sandwich on the floor. She took a picture of it, ate the sandwich, then left the mess on the floor. I stepped on it in the dark. That is just wrong!

Literally, I had the same night time snack last night! Peanut butter, banana, and milk from the carton! Twins. Haha!

Up since 4.30?? That’s rough but I hope your performance went well! And fuelled by some awesome food from the day before. I’m not a fan of quinoa but in that combination any grain would be right up my alley. Black beans, mango, corn and lots of spices – perfect!
My usual night time snacks are Greek yogurt with coconut flour, vanilla and sweetener mixed in, chocolate and fruit.

I haven’t tried coconut flour yet! What does it do to the greek yogurt?
You’re missing out! The coconut flour’s absorbing quality makes the yogurt even thicker, creamier and adds a delicious taste. Topped with almond butter and a sprinkling of salt it’s the best.

Eeep, I would have totally cried if my sandwich went down!..then I would have eaten it of course – amid sobs π . Oh how I long to have Larabars in my end of the world; I always pine away at the sight of awesome flavors (like Peanut butter cup!) on blogs.
Pssst! Hear this: I caved in and a bought a jar of Sunflower Seed butter. It was terrible. Seriously. Like “I can’t even stand the smell bad!”
At least I don’t need to fight away my curiosity when I pass it in the store now hey ;)!? I’m planning to give my thorough analysis on why I assume the taste does not appeal to me, soon..but I couldn’t keep it to myself -clearly- hahaa.

What?! Oh no! To be honest with you, the first time I tried it I left in in my fridge for a few months because it tasty pretty gross to me. But then I tried it on my oatmeal and I really liked it! So maybe you should try it on something else?! I’m looking forward to hearing your thoughts on it!

I love Larabars but they are a little too pricey so I’ve been experimenting with making my own! Right now my favorite combo is raisins, peanut butter, almond slices and cocoa powder blended in a food processor and rolled into bite size balls. Super good! Your quinoa bowl looks delish, I may have to try making it next week!
